The term semolina is also used to distinguish coarse middlings from other wheat varieties, as well as other grains such as corn and rice. Carotenoids (the same substance that turns carrots orange!) are responsible for the intense yellow colour. Although most people associate semolina with pasta or couscous, it also creates a flavorful, chewy bread. Harcha (sometimes spelled Harsha) is a Semolina flour-based pan-fried bread.
