If harvested during the optimal period, the tart and sour taste of the berries will be somewhat less pronounced, but nevertheless, they are unsuitable for raw consumption because of their high tannin content. From the fresh sloes, for example, a dark blue, almost black, sour juice can be prepared. Dried blackthorn berries cannot be made into juice, but you can use them to prepare a flavourful tea or syrup or make jam and jelly from them (see Biojoy recipe tip).
